🍰 Eggless Fresh Berry Cream Cake Recipe

📝 Ingredients
For the Eggless Sponge Cake:
- All-purpose flour – 1½ cups (180g)
- Baking powder – 1½ tsp
- Baking soda – ½ tsp
- Salt – a pinch
- Thick yogurt (curd) – ½ cup (120g)
- Sugar – ¾ cup (150g)
- Oil – ½ cup (120ml, neutral flavor)
- Milk – ½ cup (120ml)
- Vinegar or lemon juice – 1 tbsp
- Vanilla extract – 1½ tsp
- Lemon zest (optional) – ½ tsp

For the Whipped Cream Frosting:
- Heavy whipping cream – 1½ cups (chilled)
- Powdered sugar – 3–4 tbsp (adjust to taste)
- Vanilla extract – 1 tsp
For the Berry Layer:
- Fresh mixed berries – 1½ to 2 cups (strawberries, blueberries, raspberries, etc.)
- Optional: 1 tbsp sugar + 1 tsp lemon juice (to lightly macerate berries)

1. Prepare the Eggless Sponge Cake:
- Preheat oven to 175°C (350°F). Grease and line two 6-inch or 8-inch cake pans.
- Mix yogurt and sugar in a bowl until smooth.
- Add oil, milk, vinegar, vanilla extract, and lemon zest (if using). Mix well.
- Sift in flour, baking powder, baking soda, and salt. Fold gently to form a smooth batter.
- Divide the batter into the pans and bake for 25–30 minutes or until a toothpick comes out clean.
- Cool the cakes completely on a wire rack.

2. Make the Whipped Cream Frosting:
- Beat chilled heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Keep it refrigerated until ready to frost.
3. Prepare the Berries:
- Wash and dry the berries.
- Slice strawberries and optionally toss all berries with sugar and lemon juice to enhance flavor.

4. Assemble the Cake:
- Place one cake layer on a serving plate.
- Spread a layer of whipped cream, then add fresh berries.
- Place the second cake layer on top and frost the top and sides with more whipped cream.
