π Ingredients:
For the Eggless Sponge Sheet:
- All-purpose flour β 1 cup (120g)
- Baking powder β 1 tsp
- Baking soda β Β½ tsp
- Salt β a pinch
- Thick yogurt β Β½ cup (120g)
- Powdered sugar β Β½ cup (100g)
- Milk β Β½ cup (adjust as needed)
- Vinegar or lemon juice β 1 tbsp
- Oil β ΒΌ cup (60ml)
- Vanilla extract β 1 tsp
For the Whipped Cream Filling:
- Heavy cream (chilled) β 1Β½ cups
- Powdered sugar β 3 tbsp (adjust to taste)
- Vanilla extract β 1 tsp

1. Bake the Sheet Cake:
- Preheat oven to 175Β°C (350Β°F). Line a 10×12 inch rectangular baking tray with parchment paper.
- In a bowl, mix yogurt and sugar until smooth. Add oil, vinegar, vanilla, and milk. Mix well.
- Sift in flour, baking powder, baking soda, and salt. Fold gently to make a smooth, pourable batter.
- Pour into the tray and spread evenly.
- Bake for 12β15 minutes or until the top is lightly golden and springs back when touched.
- While still warm, carefully roll the cake with parchment paper (like a Swiss roll). Let it cool completely rolled β this helps prevent cracks.
2. Make Whipped Cream Filling:
- Beat chilled heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Chill until needed.
3. Assemble the Vertical Cake:
- Unroll the cooled cake and cut into 3 or 4 long strips (widthwise).
- Spread whipped cream evenly on each strip.
- Start rolling the first strip into a spiral, then keep adding the next strip around it to make one tall spiral.
- Carefully stand the spiral cake upright to reveal vertical layers.
4. Frost and Decorate:
- Cover the entire upright cake with whipped cream or buttercream.
- Decorate with fresh fruits, sprinkles, ganache, or chocolate shards.
